We'll be talking about innovations in new plant proteins, plant-based snacks, the presence of fruit (dried, infused, candied) to increase the recommended consumption of F&V, and ‘other ways’ of eating fruit and vegetables such as pure fig juice, date crisps, sesame-coated chickpea snacks, textured and fermented proteins, etc.

Microfoams, mushrooms, mycoproteins, sprouts from .... - fermented vegetables, kimchi and those from France, hydroponics (I would have liked to have had precision fermentation), etc.

Sunday and Tuesday: Formulate more plant-based solutions & discover new sources of green protein

Formulate meat product substitutes or make half-green, half-red products. The solution is also here. You can drastically reduce meat consumption by making vegetarian dishes, but you can also reduce the amount of meat by adding cereals, pseudo-cereals (quinoa, etc.) or pulses and seeds. More proteins and nutrients, without fear for taste or pleasure. For example: pork fillet with apricots and almonds, topped with rice and lentils; vegetable spring rolls with lentil shoots...
