Detailed description
Romanesco and onions are:
- chopped and carefully washed to remove any residue introduced during collection, then cut to customer specifications.
- subjected to a flow of -40ºC air, which rapidly freezes the vegetables at a temperature of -18ºC. This rapid ultra-freezing process ensures that the ice crystals that form inside the tissue cells are very small. This prevents the cell walls that make up plant tissue from breaking. As a result, when the product is thawed, there is no spillage of cell fluids, guaranteeing texture, nutritional value and flavor equal to that of a freshly harvested product.
